Normally I’m a “simply add water” kinda girl when it comes to pancakes. I mean, really, why measure out all those ingredients when you can just dump in a little H2O and call it a day? That was until I sank my teeth into these heavenly pancakes.
Oh.my.gosh, people. Can we say ri-DANG-diculous? Seriously, these pancakes are really amazing. Definitely worth going to the hassle of measuring out all those dry ingredients for. I found the recipe on a bag of flour from Trader Joe’s and thought the sound of “Light n’ Fluffy Pancakes” had a pretty nice ring to it.
I actually used this flour.
There’s something about using unbleached flour that makes me feel better serving things like this to my family. King Arthur flour is good, quality stuff. (as is the Trader Joe’s version, I’m sure.)
1-1/2 cups all purpose flour
3-1/2 teaspoons baking powder
3/4 teaspoon salt
1 teaspoon baking soda
1 tablespoon granulated sugar
1-1/4 cups milk
3 tablespoons butter, melted
For slightly sweeter pancakes, add 1 teaspoon of vanilla extract.
1) In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2) Heat a lightly oiled (I used butter–but make sure your griddle’s not too hot) griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot. Yields about 6-8 pancakes.

Waking up Christmas morning and diving into the perfectly proportioned amount of butter to syrup ratio on a short stack of hot light n’ fluffy pancakes (with a side of deliciously crunchy bacon). Did I rope ya in yet? Do it. That’ll be one Christmas tradition you’ll never get sick of!
